  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon

  • 1 cup chopped walnuts (optional)

For the Cinnamon Spice Butter:

  • 1 stick (8 tablespoons) salted butter, softened
  • 1/4 cup maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • Pinch of sea salt

Instructions

Instructions:

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Add the coconut oil, maple syrup, eggs, and vanilla extract to the bananas. Stir until well combined.
  4. Gently mix in the flour, baking soda, cinnamon, and salt. Avoid overmixing for a tender loaf.
  5. Fold in the chopped walnuts, if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

For the Cinnamon Spice Butter:

  1. In a medium bowl, beat the softened butter with maple syrup, cinnamon, nutmeg, allspice, ginger, cloves, and a pinch of salt.
