Prepare the Batter

- Stir in vanilla extract, lemon zest, heavy cream, and melted butter.
Combine Dry Ingredients
- In a separate bowl, sift together flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture—do not overmix.
Chill the Batter
- Cover the batter with plastic wrap and refrigerate for at least 1 hour (overnight for best results).
Prepare the Madeleine Pan
- Preheat oven to 375°F (190°C).
- Grease the madeleine pan with butter and a light dusting of flour.
Fill & Bake
- Spoon or pipe the batter into the molds, filling each about ¾ full.
- Bake for 10-12 minutes until golden brown and slightly firm.
Cool & Serve
- Let cool for 5 minutes before removing from the pan.
- Dust with powdered sugar and serve warm!
Notes
- Chilling the batter helps create the classic hump shape in madeleines.
- Using cake flour instead of all-purpose flour results in a softer crumb.
- For extra flavor, try adding a dash of almond extract or swapping lemon zest for orange zest.
